The Bitter Almond oil used as a perfume note is a warm and sweet fruity scent, a complete paradox to its name’s bitterness. The major constituent of this ingredient -used as a top or middle note- is the chemical compound benzaldehyde, which lends the rich almond-like odor, intensely sweet and powdery just like the delicious marzipan. The one thing that differs in this aromatic note is the thin stream of a cherry odor which can become tangy sour or deeply bitter.
